Here's a simple and flavorful garlic mutton recipe that you can try:
### Ingredients:
- 500g mutton, cut into pieces
- 10-12 garlic cloves, finely chopped
- 2 onions, finely sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon cumin seeds
- 3-4 tablespoons oil
- Salt, to taste
- Fresh coriander leaves, chopped (for garnish)
- 1/2 cup water
### Instructions:
1. **Marinate the Mutton:**
- In a large bowl, mix the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, and salt.
- Let it marinate for at least 30 minutes to an hour. For better results, you can marinate it overnight in the refrigerator.
2. **Cook the Mutton:**
- Heat oil in a large pan or pressure cooker over medium heat.
- Add cumin seeds and let them splutter.
- Add the finely chopped garlic and sauté until it turns golden brown.
- Add the sliced onions and cook until they become soft and golden.
- Add the chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil starts to separate.
- Add the marinated mutton to the pan. Stir well to coat the mutton with the onion-tomato mixture.
- Cook the mutton on medium heat for about 5-7 minutes, stirring occasionally, until it starts to brown.
- Add garam masala powder and mix well.
3. **Simmer or Pressure Cook:**
- If cooking in a regular pan, add 1/2 cup of water, cover the pan, and let the mutton cook on low heat for 45 minutes to 1 hour, or until the mutton is tender.
- If using a pressure cooker, add 1/2 cup of water, close the lid, and cook for 4-5 whistles on medium heat. Let the pressure release naturally.
4. **Final Touch:**
- Once the mutton is cooked and tender, check for seasoning. Adjust salt and spices if needed.
- Garnish with fresh coriander leaves.
5. **Serve:**
- Serve hot with rice, naan, or roti.
