Classic Coconut Ricotta Cream Cake 🍰
Ingredients:
1 cup ricotta cheese
1 cup coconut cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup shredded coconut
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 teaspoon baking powder
1/2 teaspoon salt
Instructions:
Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
Cream butter and sugar until fluffy. Add eggs one by one, mixing well.
Mix dry ingredients separately. Gradually add them to the wet ingredients, alternating with ricotta and coconut cream.
Bake for 30-35 minutes, cool completely.
Whip together ricotta, coconut cream, powdered sugar, and vanilla for the topping.
Frost cooled cake with coconut cream and garnish with fresh fruit.
